There's more than one way to show your Valentine you love them, but what's better than a home cooked meal? The aroma of a freshly made spaghetti sauce will fill your kitchen with love and your special someone will be thrilled you took the time to make them a homemade meal. This recipe has been passed down from my Italian grandmother and brings me so much joy to make for my own little family now. I hope you all enjoy it!
Reminder: There is room to be creative and add your own proteins or veggies. I use fresh tomatoes but feel free to use canned. Just remember if you use fresh tomatoes they will need longer to reduce (about 2 hours). If you don't have time to wait canned tomato will do the trick!
5 lbs fresh tomatoes peeled and seeded (Or four 15 oz cans of stewed, crushed or whole tomato)
1 can of tomato paste
2 medium onions diced
8 cloves garlic minced
1 can chicken stock
¼ cup olive oil
1/3 cup fresh basil finely chopped
1 sprig fresh thyme leaves or ½ tsp dried thyme
1 sprig fresh oregano or 1 tsp dried oregano
2 sprigs fresh parsley or 1 tsp dried parsley
1 tsp salt
1 tsp white sugar (optional)
Pasta Sauce Instructions:
Heat the olive oil in a medium size pot over medium heat. Add onions and saute until soft, about 5 minutes
Add garlic and saute another minute.
Then, add tomatoes, tomato paste, oregano, basil, bay leaves, thyme and salt/pepper.
Bring to a boil and immediately reduce to a simmer.
Simmer for 10-15 minutes to let flavors meld. (I usually simmer with fresh tomatoes for 3-4 hours for a thicker sauce with a deeper flavor).
Serve over pasta of choice, sprinkle shaved parmesan over and enjoy!
